Many organisations send you additional information with the application pack. Most organisations now have a website. Go the there "About us" page and download relevant information. Particularly the lastest news (you can base one of your question to them on this) - that will impress them you've done your homework.

You can also ask your friends if they know who works there now or in the past. Get in contact with them and tell you have an interview and like to anything they can tell you about the organisation/company.

Get to the organisations history and major events or upheavals coming up. Understand there general aims and goals. They will be impressed. After they have given you a brief overview of the company at the beginning, you can pipe up and say "yes and I understand you are bringing this new system ..........., on board later this year".
